The History of Santa Maria Style Barbecue
In the early 1800's, ranchers in Central California's Santa Maria Valley gathered together to help each other with the Spring roundup. On an outdoor grill, friends and neighbors would celebrate their work by preparing the hot coals of a red oak fire. Here, they would sear thick beef roasts and serve them with the traditional fare: Pinquito beans, home-made salsa and garlic bread.
